I love Kimchi fried rice! It’s actually pretty easy to make if you have the ingredients. I generally followed this recipe for the kimchi fried rice with a few modifications.

Kimchi Fried Rice
  • 2 1/2 tbsp kimchi juice and 1 tbsp gochujang
  • 1 cup kimchi (chopped into thumbnail size)
  • 3 cups steamed rice
  • 1/2 tsp garlic
  • 1/2 tbsp sesame oil
  • 1/2 tbsp cooking oil
  • 1-2 carrots (shredded)
  • green onion (about 2 stalks, chopped)
  1. Medium high heat. Add cooking oil. Fry garlic.
  2. Add kimchi and stirfry for 1 min. Add shredded carrots.
  3. Reduce to med-lo heat, add rice, gochujang, kimchi juice mix. Cook for 7 min.
  4. Add sesame oil and remove from heat
  5. Add chopped green onions, top with sesame seeds and/or seaweed if desired. Cook about 5 eggs sunny side up, break into pieces to add into rice. Add extra protein if desired.

I cooked some chicken thighs as my protein. If you don’t mind being a bit unhealthy, kimchi fried rice tastes really good with some fried spam 😉 Here are the simple ingredients I used to cook the chicken (1lb of chicken for stronger taste or 2lb for a less salty flavor):

  • 5 tbsp soy sauce
  • 2 1/2 tbsp brown sugar
  • 2 tbsp sesame oil

I stirfried the chicken in oil on med-hi heat till almost cooked through and then added the above ingredients to make a sauce.
