Simple but tasty! Meal inspired by Primavera Kitchen.

  • 2 tsp olive oil
  • 1 lb fresh Italian sausage links (I like the spicy ones)
  • 1 cup white onion, sliced
  • 2-3 bell peppers, sliced (I prefer red)
  • 3 garlic cloves, sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/2 cup chicken broth
  • splash of wine (sherry, cooking wine, etc whatever you have on hand)
  • 1 tbsp chopped parsley
  • 2 tbsp chopped basil
  1. Heat pan to med-hi. Add olive oil. Cook sausage 2 min per side until browned. Set aside. I sliced each link into half for easier eating later.
  2. Cook onions 2 min. Add bell peppers, garlic, salt + pepper, red pepper flakes. Cook 5 min
  3. Add chicken broth & wine. Scrape bottom of pan. Add sausage. Stir in parsley & basil. Reduce to med-low heat, cover with lid & simmer 10 min.
  4. Uncover pan. Cook on med-hi for 3 min until sauce thickens.

We enjoyed these hot links on a potato bun with mayo and topped with the onion/bell peppers/sauce. Some pickled jalapenos also made it extra tasty. Add sriracha or mustard if desired.
