Easy and tasty! I love that you could add in whatever ingredients you want or have on hand. I used this recipe.

Egg Muffin Cups

Ingredients:

  • 2 tbsp olive oil
  • 1 1/2 cups finely diced potatoes
  • 1 cup diced onion
  • 8 large eggs
  • 1 cup shredded cheese (I used gouda)
  • 1/2 cup milk
  • 1/2 tsp ground black pepper
  • 1 1/2 cup chopped fresh spinach
  • 1/4 tsp and 1/2 tsp salt

Directions:

  1. Fry potatoes, onion, 1/4 tsp salt for about 5 min (I fried a lot of extra potatoes for homefries so I did about 10 min). Next time I would try cooking the spinach briefly so that it softens a bit. Remove and let cool.
  2. Whisk eggs, milk, cheese, pepper, 1/2 tsp salt in a large bowl. Add potatoes/onions/spinach. I would also add a dash of random seasonings like chipotle pepper, red pepper flakes, onion or garlic powder, etc whatever you feel like adding. You could play around with other ingredients like bacon or ham or tomatoes, etc. Mix well.
  3. Ladle mixture into silicone muffin pan. Bake until firm, about 25 min at 325F
