Fresh Lemonade

{May 6, 2020} Something I didn’t take pleasure in before the COVID-19 crisis was fresh fruit. I try to go to the grocery store every 2-3 weeks instead of once a week or whenever I feel like it now. Fruit and veggies don’t have a super long shelf life so that’s something that’s more appreciated these days.
My neighbor saw us in the backyard over his fence (he was on a ladder picking fruit from his tree). He asked us if we wanted some lemons and threw them over for us haha!
I didn’t want to make a huge pitcher of lemonade so I tried to pick a ratio that would be good for a small container. Makes 2 generous servings or maybe 4 small servings.
- 1/2 cup sugar
- 3 cups water (plus more to dilute to taste)
- 1/2 cup lemon juice (about 3 medium/large lemons)
- Crushed mint leaves
I made some hot water with our kettle to pour over the sugar in order to dissolve it easily, then poured in the rest of the ingredients. Stuck it in the fridge to chill and boom!
