I used this recipe to make chorizo breakfast burritos! I love chorizo – yumyum Mexican food. When I noticed they sell raw chorizo at the supermarket and how easy it was to get, I was so excited to make something with chorizo!

Ingredients I used for 10 servings:

  • 3 medium russet potatoes (I would use more next time since I like potatoes)
  • 20 oz chorizo
  • 8 bunches of scallions (whites included)
  • 12 large eggs
  • Oil
  • 10 10″ flour tortillas
  •  1 1/3 cup cheese (white)
  • 1 cup fresh cilantro chopped
  1. Peeled/chopped potatoes, covered w/ saran wrap (loosely…I did it tightly the first time and it exploded lol), microwaved for 4 min. Tossed w/ oil (no salt next time, the chorizo is salty enough). Then fried them till they were brownish.
  2. Cook chorizo 5-10 min in pan, using spoon to break up. It was my first time cooking chorizo…and I have to say I was pretty surprised. It turned into this big stew of fat liquids!!! So when I was done cooking the chorizo, I drained it through a strainer and let it sit (expelling more juices) before I scooped up the meat again to continue cooking.
  3. Either warm tortillas 10-20 sec per side in a pan, or in the microwave between two damp napkins.
  4. Beat 12 eggs, scrambled them in large pan. When almost ready, added chorizo into the eggs along with the onions and cilantro. Don’t skimp on cilantro and onion since the chorizo is pretty overpowering. Mix in the cheese. I used cheddar since that’s what I had, but it’s a bit too salty for this; definitely use a white cheese.
  5. Assemble burritos!

Mmmm, these are delicious. Good chorizo fix.
