{August 7, 2013} I looked over a couple of recipes for scotch eggs. Even baked rather than deep fried, these tasted really delicious, especially dipped in mustard sauce. They are extremely, extremely filling. The outer layer even stays a bit crispy after being baked.
Ingredients:
- 6 eggs
- 1 lb pork sausage meat
- 2 tbsp parsley
- 1 beaten egg + 1 egg
- 1 cup flour
- salt + pepper
- 1/4 cup milk
- 2 cups panko bread crumbs
- 1/2 cup mayo + 3 tbsp mustard + 1 lemon
First boil 6 eggs: Bring pot of water to a boil, put eggs in, gentle boil for 6 min, cool in cold water 7-10 min.
Prepare meat mixture: Mix 1 lb pork sausage meat with 2 tbsp parsley, 1 beaten egg.
Prepare flour mixture: Add salt and pepper into flour.
Prepare egg mixture: beat one egg with 1/4 cup milk
Roll eggs in flour, then cover with divided sausage meat mixture.
Dip egg into flour, then beaten egg, then panko bread crumbs. Bake on greased baking sheet at 400 degrees F for 20 min and flip over for another 20 min.
