{May 15, 2013} Kimchi: I used this recipe and it was the one that gave me the answer on how to bake a wonderfully crispy chicken without frying it. When I first tasted my cheddar baked chicken out of the oven, I savored the crunch and it could almost pass off as fried. Unfortunately, the crisp does not linger for leftovers, but that’s to be expected. The secret is a tasty flour-mixture layer, eggwash layer, and then breadcrumb/rice crispy cereal layer before drizzling butter all over it. Next time I would definitely slice the chicken half lengthwise and pound it out, though, for a more even breading to chicken ratio. The chicken breasts were huge and the huge center was bland as chicken breasts always are.
