Cooking: Lemon Bars

{April 30, 2013} Kimchi: These are surprisingly good, since normally I’m not a fan of lemon flavored desserts. I think it’s because these lemon bars are very sweet and have a good texture (custardy lemon part and crunchy shortbread-like crust).
Kimchi: This is the recipe I used. I used around 1/2 a cup of lemon juice and the zest of two lemons.
It was fun zesting the lemon because it was the first time I used it properly, lol! I never attempted recipes that use zest because we never had a zesting tool, but it turns out my mom bought one years ago. She thought it was a coconut shaver and when she found out it didn’t work very well, she kept it in the back of the drawer, thinking it was useless. When I cleaned out the drawer I was pleasantly surprised we actually had a zester! Ha. They freeze quite well.
