Cooking: Sausage, Pepper, Potato Casserole

{April 18, 2013} Kimchi: I had this recipe saved for a while since it sounded really good and I finally got to try it when my mom came home with some high quality Italian pepper sausage. I think having a high quality sausage really makes this dish.
The soft veggies with caramelized onions paired really nicely with the sausage and the broth/wine mixture soaked into the potatoes. I just used a bit of wine rather than the full amount called for (red wine instead of white too since that was left conveniently by my uncle on the table lol) but I can definitely see more wine giving it more flavor if you like wine.
I like it. I’d say it’s even good for picky eaters.
