Caramelized Chicken

Kimchi: I used this recipe. I think I omitted water and reduced the ratio of ingredients to my chicken. It is an extremely salty dish if your ingredients are more salty (I have a brand of soy sauce that needs half the amount of usual soy sauces) so it must be eaten with lots of steamed rice in that case, but once you get the hang of it, it’s perfection. The sweet and salty flavors work really nicely with the green onions, cilantro, jalapenos, and rice.

Chef John’s cooking tip of pushing the meat towards the sides of the pan to let the sauce cook faster in the center is great.
